INGREDIENTS

  •  cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsweetened cocoa powder
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup unsalted butter softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup buttermilk
  • ½ cup boiling water
  • 1 cup raspberry jam
  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • Red food coloring
  • Black food coloring
  • Edible eyeballs for decoration

INSTRUCTIONS

Step 1

  • Preheat your oven to 350°F (175°C) and line a cupcake pan with cupcake liners.

Step 2

  • In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix well until combined.

Step 3

  • Add the softened butter, eggs, vanilla extract, and buttermilk to the dry ingredients. Beat with an electric mixer on medium speed for about 2 minutes until smooth.

Step 4

  • Carefully stir in the boiling water until the batter is well combined. The batter will be thin, which is normal.

Step 5

  • Pour the batter into the prepared cupcake liners, filling each about 2/3 full.

Step 6

  • Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Allow the cupcakes to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Step 7

  • Once the cupcakes are cool, use a small knife or a cupcake corer to remove a small portion from the center of each cupcake, creating a hole for the filling.

Step 8

  • Fill each hole with raspberry jam, allowing it to overflow slightly to create a 'bleeding' effect.

Step 9

  • In a separate bowl, whip the heavy cream with powdered sugar until soft peaks form. You can add a few drops of black food coloring to the whipped cream to create a spooky color.

Step 10

  • Frost the top of each cupcake with the black whipped cream using a piping bag or a spatula.

Step 11

  • To finish, drizzle some red food coloring over the top of the cupcakes to mimic blood and place an edible eyeball on top for decoration.
