Creepy Bleeding Halloween Cupcakes

INGREDIENTS
- 1½ cups all-purpose flour
- 1 cup granulated sugar
- ½ cup unsweetened cocoa powder
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup unsalted butter softened
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup buttermilk
- ½ cup boiling water
- 1 cup raspberry jam
- 1 cup heavy cream
- 2 tbsp powdered sugar
- Red food coloring
- Black food coloring
- Edible eyeballs for decoration
INSTRUCTIONS
Step 1
- Preheat your oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
Step 2
- In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix well until combined.
Step 3
- Add the softened butter, eggs, vanilla extract, and buttermilk to the dry ingredients. Beat with an electric mixer on medium speed for about 2 minutes until smooth.
Step 4
- Carefully stir in the boiling water until the batter is well combined. The batter will be thin, which is normal.
Step 5
- Pour the batter into the prepared cupcake liners, filling each about 2/3 full.
Step 6
- Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Allow the cupcakes to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
Step 7
- Once the cupcakes are cool, use a small knife or a cupcake corer to remove a small portion from the center of each cupcake, creating a hole for the filling.
Step 8
- Fill each hole with raspberry jam, allowing it to overflow slightly to create a 'bleeding' effect.
Step 9
- In a separate bowl, whip the heavy cream with powdered sugar until soft peaks form. You can add a few drops of black food coloring to the whipped cream to create a spooky color.
Step 10
- Frost the top of each cupcake with the black whipped cream using a piping bag or a spatula.
Step 11
- To finish, drizzle some red food coloring over the top of the cupcakes to mimic blood and place an edible eyeball on top for decoration.
